How Vietnamese Coffee Is Processed
Processing changes the cup as much as the roast does, and it is the part of Vietnamese coffee that has changed most in the last decade.

The short answer
Most Vietnamese coffee is natural-processed: whole cherries dried in the sun for two to four weeks, then hulled. Washed processing — removing the fruit before drying — is common for arabica in Lâm Đồng and Sơn La. Honey processing, where the sticky mucilage is left on during drying, is newer and concentrated among fine-robusta producers in Đắk Nông and Đắk Lắk.
What “processing” means
A coffee cherry is a fruit with one or two seeds inside it. Processing is everything between picking the fruit and having a dry, storable green bean.
Underneath the terminology there is only one real question: how much of the fruit stays in contact with the seed, and for how long, while it dries?
More fruit contact means more sugar and more fermentation reaching the bean, which produces sweetness, body and fruit character — and more risk of the whole thing going wrong. Less fruit contact means a cleaner, more transparent, more predictable cup.
Every processing method is a position on that spectrum.
Natural, or dry

Whole cherries go straight onto a drying surface and stay there for two to four weeks until the fruit is leathery and the moisture content is down to around 11–12%. Then the dried husk is hulled off mechanically.
This is the traditional and still dominant method in Vietnam. It suits the conditions: the Central Highlands have a dry season that lines up closely with the November–January harvest, and it requires no water and no equipment beyond a flat surface and a rake.
In the cup it produces heavier body, more sweetness, and often dried-fruit character. It is the reason Vietnamese robusta is so frequently described as chocolatey and fruity.
The risk is that it is difficult to control. A layer raked too thick, or rain arriving mid-dry, lets fermentation run past the point anyone wanted — and produces the musty, fermented flavours that gave commodity robusta its reputation. The surface matters enormously: cherries dried on a concrete patio or on raised beds are far cleaner than cherries dried on bare earth or on a tarpaulin in a yard.
Washed

The skin and most of the pulp are removed by a depulper within hours of picking. The beans, still coated in sticky mucilage, ferment in tanks for 12–36 hours until that layer breaks down, then are rinsed clean and dried.
In the cup this gives clarity and defined acidity. Whatever the bean’s own character is, washing lets you see it without the fruit sitting on top.
That makes it the natural choice for arabica, where the point is origin character, and it is the standard for Đà Lạt and Sơn La. It requires water, a depulper, and somewhere for the wastewater to go — which is why it is less common on small robusta farms.
Honey

The skin comes off but the mucilage stays on through drying. The name has nothing to do with honey as an ingredient — it describes how the beans look and feel.
Honey lots are often graded by how much mucilage is left: white, yellow, red and black, in increasing order. More mucilage means more sweetness and more risk.
In the cup: syrupy body, caramel sweetness, and a middle position between natural’s fruit and washed’s clarity.
In Vietnam this is a newer method and it is concentrated where fine robusta is being pushed hardest — Đắk Nông in particular. It demands raised beds, frequent turning and constant attention, so it only makes sense when there is a price premium to justify the labour.
Anaerobic and other newer methods
Some Vietnamese producers now ferment cherries in sealed tanks, with or without controlled CO₂, before drying. Anaerobic fermentation produces much more pronounced and sometimes unusual flavours — boozy, tropical, sometimes intense enough to divide a room.
This is deliberate differentiation. A producer who cannot compete on altitude can compete on processing, and anaerobic fine robusta is a way of making a low-altitude coffee interesting to specialty buyers.
Whether you like it is a matter of taste. That it demonstrably changes what robusta can be is not.
Reading a bag
If a Vietnamese coffee bag names its processing method at all, it is telling you the producer thought about it. Most commodity coffee does not.
