- 1Bloom with 20 ml
Just enough to wet the bed. Wait 30–45 seconds while the grounds swell.
- 2Pour the remaining 80 ml
One pour, lid on, and leave it alone.
- 3Expect 4–6 min
Much faster and the grind is too coarse or the press too loose; much slower and it is the opposite.
- Medium-coarse — like coarse sand
- 90–96 °C, just off the boil
- 2–3 tbsp condensed milk
- A glass of about 160 ml, packed with ice
The range most Vietnamese cafés work in. Strong enough to survive milk and ice, drinkable black if you like it heavy.
