Robusta vs Arabica: What Actually Separates Them
Two species, two chemistries, two agricultural stories. The difference is real — but 'arabica good, robusta bad' is a description of how each has been farmed, not what each can be.

The short answer
Robusta (Coffea canephora) carries about twice the caffeine of arabica and more chlorogenic acid, which makes it more bitter; arabica carries roughly twice the sugar and substantially more lipids, which makes it sweeter and more aromatic. Robusta grows at lower altitudes, resists disease better and yields more. Vietnam grows overwhelmingly robusta because its main growing region sits at 400–800 m, which is too low and too warm for good arabica.
The short answer
Robusta carries about twice the caffeine and more chlorogenic acid; arabica carries about twice the sugar and considerably more lipid. Caffeine and chlorogenic acid read as bitterness. Sugars and lipids read as sweetness, body and aroma.
That is most of it. Everything else — altitude, disease resistance, yield, price — follows from the fact that these are two different plants that happen to make a similar seed.

Those figures are ranges across many studies and varieties, not fixed values — a particular lot can sit outside them. But the direction of every difference is consistent.
Two consequences are worth pulling out.
Sugar drives roast flavour. Most of the sweetness and aroma people associate with good coffee comes from Maillard reactions and caramelisation during roasting, and those need sugar to work with. Robusta simply has less to start with, which is a genuine ceiling on how sweet a robusta can taste.
Caffeine is a pesticide. Caffeine and chlorogenic acids are part of the plant’s chemical defence against insects and fungus. That is why robusta needs less chemical protection in the field — and why it tastes more bitter in the cup. The same compounds do both jobs.
The agriculture
Arabica is fussy. It wants 1,200–2,000 m, cool nights, and it is vulnerable to coffee leaf rust and to the coffee berry borer. Robusta tolerates 0–800 m, heat, humidity, and shrugs off diseases that flatten arabica. It also yields more per hectare.
This is the honest reason robusta dominates the low-altitude tropics. It is not that farmers chose the worse coffee; it is that arabica will not grow there.
Why the reputation gap is bigger than the quality gap
Robusta’s bad name is mostly a history of how it was sold, not what it is.
For decades robusta was a commodity input — bought by the tonne for instant coffee and cheap blends, priced on the London exchange with no premium available for doing anything better. When nobody pays for quality, nobody produces it. Cherries got stripped green and ripe together, dried on bare ground, and sold as one undifferentiated grade.
That loop is now partially broken. The Coffee Quality Institute runs a Fine Robusta evaluation protocol, separate from the arabica cupping scale, and specialty buyers pay above commodity for lots that meet it. A meaningful amount of that work is happening in Đắk Nông and Đắk Lắk.
It would be dishonest to conclude that fine robusta now equals good arabica — the sugar and lipid ceiling is real. It is equally dishonest to compare a carefully processed Ethiopian arabica with the worst commodity robusta and call that the species difference.
What this means when you buy
If a bag says “100% arabica” and nothing else, that is marketing, not information. Arabica grown badly at 900 m is worse than robusta grown well at 700 m.
If you are brewing a phin, robusta is usually the better choice, and not as a compromise. The drink is built around a heavy, bitter, low-acid coffee that stands up to condensed milk and ice. Put a delicate washed arabica through the same process and the milk erases it.
If you want to taste Vietnamese arabica, buy it from Lâm Đồng or Sơn La and brew it like arabica — a wider ratio, around 1:8, or a pour-over rather than a phin.
Vietnam’s split
Vietnam’s 2026/27 crop is forecast at roughly 31.4 million bags of robusta against 1.1 million of arabica. That is not a preference; it is a map. Most of Vietnam’s coffee land is between 400 and 800 metres, and there is only so much of the country high enough for arabica to be worth planting.
Questions people ask
- Is robusta worse than arabica?
- Not inherently. Robusta has historically been grown for yield and sold as a commodity, which produced a great deal of poor coffee and a lasting reputation. Carefully grown and processed fine robusta scores well in professional evaluation. The species sets a different flavour ceiling, not automatically a lower one.
- Does robusta have more caffeine than arabica?
- Yes, roughly double. Arabica typically runs 0.8–1.6% caffeine by dry weight and robusta 1.5–2.7%. Caffeine is part of the plant's insect defence, which is also why robusta needs less chemical protection.
- Why does Vietnam grow robusta instead of arabica?
- Altitude and climate. The Central Highlands, where most Vietnamese coffee grows, sit between about 400 and 800 metres — warm and low for arabica, close to ideal for robusta. Vietnam does grow arabica, but only in the few places high or cold enough: Lâm Đồng, Sơn La and Quảng Trị.
- Can you taste the difference between robusta and arabica?
- Easily, especially black. Robusta reads as heavier, more bitter, lower in acidity, often with cocoa, grain and woody notes. Arabica reads as lighter, more acidic and more aromatic, with fruit and floral notes more available.
