Phin Brew Time: Why 4 to 6 Minutes
The phin has no timer, no pressure and no pump. Brew time is the only feedback it gives you — which makes it the most useful thing on the counter.

The short answer
Four to six minutes from the end of the main pour. Under two minutes means the coffee is under-extracted and will taste thin and sour; over eight means it is over-extracted and will taste harsh. Adjust with grind, dose and press pressure — one at a time.
What the clock is actually measuring
Brew time is a proxy for contact time — how long water spends in contact with coffee. Contact time drives extraction: how much of the soluble material in the grounds ends up in the cup.
Too little and you get the compounds that dissolve first, which are the acids and the salts. That tastes sour, thin and sometimes savoury.
Too much and you get the ones that dissolve last, which are bitter and astringent. That tastes harsh and drying, distinct from the pleasant bitterness robusta has anyway.
Four to six minutes is where a phin at a 1:5 ratio lands in between.
The two-minute phin
This is the most common failure and the hardest to diagnose, because the coffee looks fine — dark, full glass, everything normal. It just tastes thin and slightly sour, and people usually conclude the beans are bad.
They are not. The water went through without doing its job.
Three causes, in the order worth checking:
1. The bed is not level. Tap the phin on the counter to settle the coffee flat before setting the press. An uneven bed means the water finds the shallow side and runs straight down it. This costs nothing to fix and is the most frequent cause.
2. There is not enough coffee. The chamber needs to be a third to a half full for the bed to seal against the press. Two teaspoons in a 120 ml phin is not enough, no matter how fine you grind it.
3. The grind is too coarse. Fix the first two before touching this one.
The stalled phin
Less common, more obvious, and usually self-inflicted: the press plate has been screwed down like a tamper.
Back it off until it is barely in contact with the coffee. On most screw-down phins, half a turn past first contact is the whole usable range.
If the press is already loose and it still stalls, the grind is genuinely too fine — likely an espresso grind, or a very old blade grinder producing mostly dust.
Temperature drifts, and it matters
A 120 ml phin is a small amount of thin metal holding about 100 ml of water in open air. It cools fast. Over a five-minute brew, water that went in at 94 °C may be at 75 °C by the end.
That drop is part of why the phin extracts the way it does — the later, most bitter compounds extract less efficiently at lower temperature, which partly self-corrects a long brew.
Two things reduce the drift usefully: rinsing the phin and the glass with hot water before you start, and keeping the lid on. Neither is fussy and both change the result.
What not to do while you wait
Do not stir the bed. Do not lift the lid repeatedly. Do not press the plate down to speed it up.
All three disturb the bed, and a disturbed bed channels. Once water has found a fast path through the coffee, it will keep using it, and the rest of the dose is simply not brewed.
The waiting is the method. In Vietnam this is the entire social premise of the drink — you sit down because the coffee takes four minutes, and by the time it is ready you are in no hurry.
Questions people ask
- How long should a phin take?
- Four to six minutes after the main pour, plus 30–45 seconds of bloom before it. A phin that finishes in two minutes has rinsed the coffee rather than brewed it.
- Why is my phin dripping so slowly?
- Almost always the press plate screwed down too far. Back it off until it barely touches the coffee. If it still stalls, the grind is too fine.
- Why does my phin drip too fast?
- Usually too little coffee for the chamber, a grind that is too coarse, or a bed that is not level so water is channelling round the edge. Check the bed is flat first, then add coffee, then grind finer.
- Should the phin be covered while brewing?
- Yes. The lid keeps heat in. A phin holds a small volume of water in thin metal and loses temperature quickly, and a cold brew extracts poorly.
